Our Bourbon Barrel Aged honey is made in partnership with Waterford Stillhouse; the only licensed distillery in Racine County since Prohibition.

 

We start with light Lindenflower Honey from our summer crop. We pour that honey into 15 gallon, small batch, charred oak bourbon barrels from Waterford Stillhouse after they've dumped their bourbon for bottling.  The honey stays in the barrel for 90 days turning and aging it carefully so that it picks up lots of bourbon and oak flavor.

 

After the honey is ready, we bottle it up for you in convenient squeeze bottles!
