Oktoberfest Brats with Jalapeño Honey Mustard Glaze

Bratwurst, sauerkraut, pretzels and mustard, Oktoberfest season was practically made for Wisconsin. This year, we’re adding a Wisconsin Bee Company twist with a simple brat recipe built around our Jalapeño Honey Mustard.



The combination of sweet honey, tangy mustard and a little jalapeño heat makes an excellent glaze for grilled bratwurst. Paired with caramelized onions, warm sauerkraut and a toasted pretzel roll, it becomes an easy Oktoberfest meal that feels festive without being complicated.

Whether you’re hosting friends, heading into a weekend of Oktoberfest celebrations or just looking for a new way to serve brats, this recipe brings together a lot of familiar Wisconsin flavors in one place.


Jalapeño Honey Mustard Oktoberfest Brats

Ingredients

  • 6 bratwurst

  • 1 large yellow onion, thinly sliced

  • 1 tablespoon butter

  • 1 cup sauerkraut, drained

  • 1/2 cup Wisconsin Bee Company Jalapeño Honey Mustard

  • 2 tablespoons apple cider vinegar

  • 1 tablespoon honey

  • 1/2 teaspoon smoked paprika

  • 1/4 teaspoon garlic powder

  • 4–6 brat buns or pretzel rolls

  • Optional chopped parsley or chives for serving


Make the Jalapeño Honey Mustard Glaze

Start by combining the Jalapeño Honey Mustard, apple cider vinegar, honey, smoked paprika and garlic powder in a small bowl. Stir until the glaze is smooth and well blended, then set about one-third of it aside to use as a finishing sauce when the brats are served.

The remaining glaze will go directly onto the bratwurst while they finish cooking. The honey helps the sauce caramelize on the outside of the sausage, while the mustard and vinegar keep the flavor bright and balanced.


Grill the Brats

Heat your grill to medium and cook the bratwurst, turning them regularly so they brown evenly on all sides. Once they are nearly cooked through, begin brushing them generously with the Jalapeño Honey Mustard glaze.

Turn the brats once or twice more as you continue brushing on the glaze. During those final few minutes, the sauce will begin to thicken and caramelize, creating a slightly sticky coating with a mix of sweetness, tang and mild heat.

Because the glaze contains honey, it can brown quickly, so keep an eye on the brats and avoid placing them over excessively high heat.


Add Caramelized Onions and Sauerkraut

While the brats are grilling, melt the butter in a large skillet over medium heat and add the sliced onion. Let the onions cook slowly for about 8 to 10 minutes, stirring occasionally, until they become soft and lightly caramelized.

Once the onions are ready, add the drained sauerkraut and continue cooking for another few minutes until everything is warmed through. For even more flavor, stir in a spoonful of Jalapeño Honey Mustard just before removing the skillet from the heat.

This combination gives you the classic tang of sauerkraut, the sweetness of caramelized onion and just enough mustard flavor to tie the whole dish together.


Build Your Oktoberfest Brat

To serve, place each glazed brat in a toasted brat bun or pretzel roll, then top it with a generous spoonful of the warm onions and sauerkraut. Finish it with an extra drizzle of the reserved Jalapeño Honey Mustard sauce.

Serve the brats alongside soft pretzels, roasted potatoes or German-style potato salad for an easy Oktoberfest-inspired meal.
