A sweet & savory classic from Wisconsin Bee Company
When winter lingers and you're craving a hearty, wholesome meal, there’s nothing better than a golden roast chicken glazed with real Wisconsin honey. This dish combines simple, nourishing ingredients into something that feels both rustic and gourmet. The natural sugars in honey caramelize beautifully in the oven, creating crispy, flavorful skin and juicy, tender meat.

Why Use Honey in Roast Chicken?
Honey does more than sweeten—it enhances the browning of the skin, balances savory herbs, and adds depth to the flavor. Plus, our all-natural Wisconsin Bee Company honey brings floral undertones that store-bought sugars just can’t match.
Ingredients:
1 whole chicken (3.5–4 lbs)
¼ cup Wisconsin Bee Company honey
2 tbsp olive oil or melted butter
2 tbsp Dijon mustard
1 tbsp apple cider vinegar or lemon juice
1 tsp salt
½ tsp black pepper
2 tsp fresh thyme or rosemary (or 1 tsp dried)
4 garlic cloves, minced
1 onion, quartered
Optional: 1 lemon, halved
Directions:
Preheat oven to 400°F (200°C). Place chicken in a roasting pan or cast iron skillet.
Make the glaze: In a small bowl, mix together honey, olive oil, mustard, vinegar, salt, pepper, herbs, and garlic.
Prep the chicken: Pat the chicken dry with paper towels. Stuff with onion and lemon if using.
Glaze generously: Brush or rub the glaze all over the chicken, including under the skin if possible.
Roast: Cook uncovered for 60–75 minutes (or until internal temp is 165°F), basting with pan juices every 20 minutes.
Rest & serve: Let the chicken rest 10–15 minutes before carving. Spoon extra honey-herb drippings over each serving.
Serving Suggestions:
Pair with roasted root vegetables, wild rice, or a crusty loaf of bread. For a truly Wisconsin-inspired meal, serve alongside a honey-glazed squash or a cranberry salad.
